I've always gotten a kick out of Nigella Lawson. She just goes to show that gorgeous women can also be witty. Lawson's new book has kept me in the kitchen the past week, testing her easy recipes and chuckling at her delicious sense of humor, if you'll pardon the pun.
Her 130 recipes are scattered over 12 chapters covering everything from weekday entertaining, prepare-ahead dishes, Mexican-inspired moments, instant Italian and speedy suppers -- day in, day out -- to name only five. Each recipe fits on a page with a full-page color photo opposite. Just reading through it is fun, but the recipes will inspire you to rattle a pot or pan.
Choosing one recipe to feature here wasn't easy, but I have to go with Nieglla's Roquamole, a culinary winner that scored big points at my house on Super Bowl Sunday. Try it and you'll see.
"Roquamole"
1 cup crumbled Roquefort or other blue cheese
1/4 cup sour cream
2 ripe avocados
1/4 cup sliced pickled green jalapenos from a jar
2 tablespoons finely sliced green onions
1/4 teaspoon paprika
Large bag of blue corn tortilla strips
* Crumble or mash the blue cheese with the sour cream in a bowl.
* Mash in the avocados.
* Roughly chop the sliced jalapenos and stir them into the mixture along with the finely sliced green onions.
* Arrange in the center of a plate or dish, dust with paprika, and surround with tortilla chips. Dive in.
Makes 4 to 6 servings.
